Cucumber atjar

Atjar – or acar – is an Indonesian side dish in which vegetables are pickled in vinegar and sugar. A sweet-and-sour side that is indispensable with a rijsttafel full of fatty meat and spicy vegetables.

In principle, you can make atjar with any firm vegetables. Think cauliflower, carrot or white cabbage. The editorial team’s favorite is cucumber; this recipe is very basic. You can still add all kinds of things. Whole garlic cloves, black peppercorns, allspice or whatever you fancy.

Method

Mix the vinegar with the sugar and salt, stirring well until everything has dissolved. Cut the shallot into wafer-thin rings and the cucumber into chunks or cubes. Add to the vinegar and leave to stand for at least an hour.
