How to make your fish crispy every time

Frying fish can be a real drama if you don’t know how to go about it. You’ve just fried the skin until beautifully crispy, you turn it over and everything sticks. With this tip, we promise that will never happen again—you need something you probably already have at home.

Here it is: all you have to do is place baking paper in the frying pan. No chance of sticking, but every chance of a super-crispy piece of fried fish. Cut a circle of baking paper about the same size as your frying pan, heat the butter or oil on it and fry your fish as you normally would. The baking paper prevents the fish from sticking, while it comes out of the pan perfectly cooked. That was easy, wasn’t it?

It’s also important to leave the fish alone. We understand that it’s very tempting to sneak a peek at how the underside of your fish is doing. Don’t! Let the fish fry on one side until it’s almost completely cooked, then turn it over and turn off the heat. The other side will continue cooking in the residual heat in the pan. Easy as pie.
