Make your own Oreos!

Chocolatier Kees Raat shares more than 150 recipes in his Chocoladebijbel. From classics like brownies and chocolate truffles to new recipes such as Oreo cookies and chocolate croquettes.

When we think of winter, we think of spending days in the kitchen baking. And when chocolate is involved, winter becomes just that little bit more enjoyable.
Method
1. Preheat the oven to 170 °C. Line a baking tray with baking paper.
2. Mix the butter, flour, black food colouring powder, cocoa powder and baking powder in a bowl until a crumbly dough forms. Add the sugar and salt and do not mix for too long, otherwise the dough will become tough.
3. Shape the dough into a ball and sprinkle it with flour. Place the dough ball on a sheet of baking paper and flatten it. Place another sheet of baking paper on top.
4. Roll out the dough between the sheets of baking paper into a rectangular sheet approximately 3 millimetres thick. Leave the dough to rest in the refrigerator for 30 minutes.
5. Cut out the dough with a round cookie cutter measuring 4 to 5 centimetres and distribute the cookies over the baking tray. Bake the cookies for 15 to 20 minutes until done. Then leave them to cool. Roll out the remaining dough and continue cutting out and baking until all the dough has been used.
6. For the filling, cut the vanilla pod in half and scrape out the seeds. Whisk the egg white, icing sugar and vanilla seeds until stiff using a whisk or mixer. Add the butter and mix until you have a light, airy cream.
7. Spoon the cream into a (disposable) piping bag, snip off the tip and pipe small dots onto half of the cooled cookies, then place another cookie on top.
