Pan con tomate

This crowd-pleaser from Nora’s childhood is genuinely on the table in no time.

Pan con tomate is a true Spanish classic. I’m half Spanish myself and grew up with this dish, which you can order at most coffee bars for around two euros.
It used to be my breakfast, along with a glass of juice. Later, a cup of coffee was added, and I would occasionally have it at drinks too. With wine instead of coffee, of course.
Drinks snack
Around drinks time, pan con tomate gets an upgrade. The toast is then topped not only with tomato, but also with slices of Jamón serrano or spicy manchego. Truly the perfect snack or small starter.
Recipe
The mixture is easy to make yourself. Grate two large, ripe and meaty tomatoes, add a spoonful of olive oil and season with salt. Rub a peeled clove of garlic over the freshly toasted bread and spread with the tomato mixture.
You can easily keep the grated tomato with olive oil in the refrigerator for 1 or 2 days, but it tastes better freshly made.
