Roasting garlic makes its sharp garlic flavor milder, while giving it a wonderfully sweet and slightly smoky taste.

Roast a whole bulb—it keeps well in the refrigerator for quite a while, although you’ll probably eat it right away. Spread it on toasted bread, mash it into a vinaigrette or sour cream to make a dip. Or give your Caesar dressing extra depth by combining raw and roasted garlic.

How to make roasted garlic

Preheat the oven to 200 degrees. Cut the top off the garlic bulb, place it in aluminum foil and drizzle a little olive oil over it. Seal the foil tightly and place it in the oven. After an hour, you’ll have roasted garlic. Easy, right?
