Thai fish or crab cakes with chili sauce

Fish cakes from the Philips Airfryer? No way! Or maybe it is, because we put it to the test during the FavorFlav Food Top 100 at BAUT and the reactions were more than enthusiastic. We coaxed the chef into giving us the recipe so you can make them at home too.

Method
1. Purée the crab or fish, coriander, kaffir lime leaf, fish sauce, sugar and red curry paste in a food processor until smooth. Add the egg whites and mix well.
2. Preheat the Airfryer to 200 °C. Shape the mixture into approximately 20 flat fish or crab cakes. Spray the cakes with a little oil and fry them in batches for approximately 8 minutes until golden brown and cooked through.
3. Meanwhile, heat the sunflower oil in a frying pan over medium heat. Fry the chili pepper for approximately 2 minutes. Add the vinegar and sugar and bring everything to a boil. Allow to reduce to a sauce in 6–8 minutes.
4. Drain the fish or crab cakes on kitchen paper and serve them with the chili sauce.
