Make sure you get super-fresh tuna from your fishmonger. It’s also important to use a sharp knife; otherwise, you’ll damage the tuna’s texture and it may become stringy.

Method

Preheat the oven to 180 ºC. Put the bread cubes and olive oil in an oven dish and toss well so that all the cubes are coated with oil. Put the bread in the oven and bake until golden brown, about 10 to 15 minutes.

Meanwhile, make the tuna tartare by cutting the tuna into small cubes. First cut it into slices, then cut the slices into cubes. You can then chop the tuna even more finely if you prefer smaller pieces.

Mix the tuna with the remaining ingredients. If you have one, press the tartare through a round ring mold so that it forms a neat circle. If you don’t have one, no problem—just place it on a plate; it will taste just as delicious.

Remove the croutons from the oven when they are ready. Let them cool briefly, then place them on top of the seasoned tuna.
