Panzanella

Panzanella is an Italian bread salad. You make it with your stale bread, fresh tomatoes, red onion, basil, garlic and olive oil. Perfect as a starter, but also as a summery main course. In the mood for some variation? Then make this version with avocado.

Panade

You make a panade with stock. The perfect description: soup to stand your spoon in. It’s not the prettiest dish you’ll ever eat, but it sure is delicious. Combine your old bread with other leftovers. Vegetables from yesterday, perhaps a piece of meat and, most importantly: plenty of cheese.

A strata is an American bread dish and actually very simple: the base consists of bread, milk, eggs and cheese. You can think of it as the savory version of bread pudding. You can eat a strata either sweet or savory. Be sure to try this version with bacon, burrata and smoked mozzarella.

Bread and butter pudding is a classic British dessert and the ultimate transformation of leftover bread. It is filled with creamy custard on the inside, while the top is buttery and crispy. Perfect paired with a scoop of homemade ice cream.
