This is how you can eat asparagus (almost) all year round

It’s one of the few products that is still truly seasonal: white asparagus. But how can you make sure you can keep eating that white gold (almost) all year round?

We’re lucky: we’re currently right in the middle of asparagus season, which—as every asparagus fan knows—runs from early April to June 24. Not that you can’t find them in stores in July and March, but they most likely won’t be grown in the Netherlands.
Asparagus subscription
Fresh, the ‘queen of vegetables’ is of course at its very best. Classically cooked with ham and egg, or with hot-smoked salmon. Did you know, by the way, that they’re also delicious when fried in butter? And did you know that there’s such a thing as an asparagus subscription, where you simply get a kilo of asparagus delivered to your home?! Cheers!
It’s clear: ideally, we’d eat white asparagus all year round. Unfortunately, that’s difficult: you can only keep them in the fridge for 2 to 3 days (wrap them in a damp tea towel).
Storing
Fortunately, there is the ultimate solution: the freezer. White asparagus keeps well in the freezer for 4 to 6 months. So if you stock up at the end of June, you can keep eating them until the end of October or even the end of December (a white Christmas after all).
Unfortunately, for the months from January to April, we have no other option than to choose green asparagus. Also absolutely delicious, for example in one of these spring pastas.
