People are always talking about the plight of perfectly ripe avocados that are still rock-hard, but mangoes are just as bad. The ultimate tip for juicy mangoes? Get them from the freezer section at the toko.

I had always seen them there at the toko while rummaging through the freezer section for dumplings, bao buns and Peking duck. A pack full of peeled mango halves, perfect for mango sticky rice or simply stirred into yoghurt. Still, I was always sceptical, because I think the frozen mango chunks from the supermarket are absolutely dreadful (unlike other fruit). Soggy or still rock-hard when thawed—yuck. When I needed mango for a recipe recently, I let myself be tempted and grabbed one of those packs. Best decision ever.

Juicy

The mango was incredibly juicy, sweet and flavourful. Exactly what you would expect from a good mango on a tropical beach. I bought it for a tapioca coconut pudding that I took to the editorial office. Even my ever-critical colleague Renée thought the mango was “delicious!” It passed the test with flying colours. No more rock-hard mangoes that you can barely get through with your knife. No more peeling mangoes at all. No, these babies now always have a place in my freezer.
