Tortilla with Ferran Adrià’s Chips

Chips are more than just a quick snack. Ferran Adrià, one of the best chefs in the world, likes to use them to make his famous tortilla de patata. The ready-made supermarket chips give the dish a delicious crunch.

The classic Spanish tortilla de patata is a simple, fluffy omelet with tender slices of potato. You make it with fresh potatoes, but chef Ferran Adrià prefers to use a large bag of plain chips. Supermarket chips as an alternative to potatoes? Yes! Much easier and much faster. And if a Michelin-starred chef says it works, you can definitely do it too.
Method
This thick tortilla comes together quickly: stir egg into a mixture of Serrano ham, piquillo pepper and (roughly broken) chips, let it sit for a while to soften, and then fry it. The trickiest part is flipping the tortilla without it breaking. So do this very carefully, by turning it out of the pan onto a plate. Want to give it a try?
