5x chicory recipes without stamppot

For most Dutch people, chicory simply goes into stamppot with potatoes, bacon bits and smoked sausage. But why? It works just as well in a pasta with anchovies or a salad with pear.

Anchovy and chicory pasta
For this pasta, it is best to use a chunky pasta, such as rigatoni. Cook the rigatoni (400 g for 4 people) in water with a generous pinch of salt. Meanwhile, fry the garlic and chili pepper in olive oil. Then add the anchovies (one tin is enough for 4 people) and fry them until they practically dissolve into the sauce. Next, add the entire bag of chicory to the pan little by little and let it wilt. Serve with some grated Parmesan cheese and you’re done.

Mediterranean stuffed chicory with rice
This chicory is stuffed with, among other things, risotto rice, capers, garlic, red chilies and Parmesan cheese. This is the kind of recipe you would not quickly come up with yourself, but that may be precisely what makes it even more delicious.
