5x next-level pancakes

Japanese, Northern Chinese, and made with buttermilk or pumpkin. We too go all in on pancakes on Pancake Day, but with a slightly different twist. These are the editorial team’s favorites.

Scallion pancakes
Once you’ve tasted a scallion pancake, you can never do without them again. So easy and so delicious. These scallion pancakes originally come from Northern China, but FavorFlav’s Marjan ate them at one of the many night markets in Taiwan’s capital, Taipei. You can even find them in the supermarket’s freezer section there. We simply make them ourselves. American buttermilk pancakes
Do you find buttermilk far too sour? Do as the Americans do: simply call it buttermilk and use it to make the batter for the ultimate American pancakes. The buttermilk gives them a wonderfully soft texture, and the batter is ready in two minutes. Serve these American buttermilk pancakes with blueberries and plenty of maple syrup.
Japanese-style pancakes
They’re fluffy, sky-high, and Japanese: guess what they are? Japanese-style pancakes, of course, duh. The baking powder and baking soda make the batter rise right out of the pan, giving you the fluffiest pancakes ever. To get the desired shape, cook them in a ring. Just make sure to grease it well. Kue dadar gulung

Pumpkin chocolate chip pancakes
Okay, this recipe for pumpkin chocolate chip pancakes is rather autumnal, but have you looked outside today? Plus: pumpkin and chocolate—that’s worth trying at the very least. You can buy pumpkin purée (online) from an American specialty store, or simply make it yourself, because in the end it’s just a matter of cooking and puréeing chunks of pumpkin. You can do it.
