6x vegetarian recipes

Even true carnivores don’t always feel like eating meat. Is today one of those days for you, but do you find vegetarian food difficult? These six editorial favourites offer the solution.

Nigella Lawson’s broccoli and Stilton soup
One of the better winter soups—and quick to make, too. You may even have some Stilton left over from last weekend’s cheeseboard, but you can also use another blue cheese.
Spicy roasted cauliflower
A recipe from Israeli chef Michael Solomonov. With these spicy pieces of cauliflower, you almost forget that you’re not eating meat. Delicious with fried potatoes, Rijssel’s for example.
Roasted pumpkin with Parmesan cream
A cross between soup and fondue—what more could you want? Delicious eaten as is or spooned up with some bread.
Deep-fried tofu with chives
Even if you don’t like tofu, you’ll enjoy this. Everything tastes good deep-fried. Okay, almost everything, but tofu definitely does. As far as we’re concerned, it’s the ultimate meat substitute. Delicious with rice and pak choi.
It can hardly get simpler than this four-ingredient salad. Yet the combination of orange and halloumi will surprise you. Delicious as a side dish with the tarte tatin below.
Beetroot and red onion tarte tatin
A nice change from the standard vegetarian quiche. And we always enjoy having pie for dinner.
