A New Noma? Something Like That.

Since announcing the closure of his legendary restaurant — to make room for his even-more-legendary-to-be new restaurant — René Redzepi has not been sitting still. One pop-up here, another pop-up there. And this week he opened 108@Noma together with former employee Kristian Baumann. Indeed, in the old Noma.

Chef Kristian Baumann came of age in the kitchen of René Redzepi’s Noma. After leaving the flagship restaurant, he helped fellow Noma-school alumnus Christian Puglisi set up the slightly more accessible, but equally successful restaurants Manfreds and Relae.
108: A little foraging, plenty of local seasonal produce and innovation.
Now Kristian is back with René, opening the first real Noma spin-off under his business wing: restaurant 108 at the old, familiar Noma address.
Casual Noma
What will Kristian be doing there? A little foraging, a little pickling, plenty of local seasonal produce and innovation. That sort of thing. A little Noma, but more casual, more family-style, more urban, he promises food site Lucky Peach.
We’re curious to see how casual the bill will turn out to be afterwards.
