One of the best sandwiches in the world? The Frenchie Dog by Richard Ekkebus. This bizarre sandwich comes from the two-Michelin-star kitchen of Amber in Hong Kong, where Ekkebus reigns supreme. What exactly is on the black hot dog? A chicken hot dog, black truffle, truffle mayonnaise, onion compote and slices of Ossau Iraty Vieille (a French cheese). The great thing is that you can now simply make it at home, because Ekkebus was generous enough to share the recipe with Lucky Peach.

Cooked: new Netflix series by Michael Pollan

Cross a few evenings off your calendar, because a new Netflix series is coming in February that is well worth watching: Cooked. The series is based on Michael Pollan’s book Cooked, which describes the development of various cooking methods. Pollan wrote the book with the aim of getting people back into the kitchen, so that centuries-old traditions would not be lost and balance could return to life. The four episodes are divided into the themes of water, fire, earth and air, with specific topics explored in each theme. For example, the episode about earth looks at how the fermentation process can preserve raw food.

Foodies in Forbes 30 under 30

Every year, Forbes publishes the 30 under 30 list. According to Forbes, it features the most influential people under thirty in the arts, culture and food business. According to the business magazine, this group is busy creating and designing the future, from the kitchen to the runway. Who appears on the list? Tom Sellers, co-owner and chef of the Michelin-starred restaurant Story in London and a former apprentice at Per Se and Noma. Also included is Henry Herbers of the Fabulous Baker Boys, an English hit series broadcast on the BBC and TLC, as well as the Dutch founders of Instock. Bart Roetert, Selma Seddik and Freke van Nimwegen are Instock’s three founders, and they previously worked at Albert Heijn. There, they watched helplessly as large amounts of food were thrown away. With Instock, they found a new destination for food that would otherwise be discarded: they simply put it on the menu. This year, the company is releasing a cookbook and opening a second location.
