Affordable and razor-sharp

Carbon steel or stainless steel
I have a carbon-steel knife myself, which is easy to sharpen and therefore easier to keep sharp than the stainless-steel version. You do need to take extra good care of this knife. Dry it immediately after using it, especially if you have cut acidic foods such as lemons. This will prevent serious rust.
When I give it as a gift, which happens often, I always choose stainless steel. Then there is zero chance of rust spots, which do find their way onto my carbon-steel knife.
