Anthony Bourdain’s Cauliflower with Sesame

‘The bad boy of food’, Anthony Bourdain, would have turned 63 today. A somewhat sad ‘hooray’, one year after his death. But to brighten things up a little, we’re happy to honor him with a few of his favorite recipes. Like this addictively delicious cauliflower. R.I.P. Anthony.

“This stuff is truly addictive. An adult can easily eat an entire head of cauliflower without any problem,” Bourdain wrote.
Preparation
- Preheat the oven to 230 °C.
- Place the cauliflower florets in a large bowl with the oil, salt, coriander, oregano and pepper, and toss well.
- Arrange the florets with space between them on a baking sheet and roast for 20 minutes, turning and flipping the sheet and florets halfway through.
- Meanwhile, whisk the tahini, miso, vinegar and 1½ tablespoons of water together in a small bowl.
- Remove the cooked cauliflower from the oven, place the florets in a bowl and toss them with the sauce and sesame seeds.
