At this new bakery, you can buy bread from a true bread sommelier

Wils, the restaurant of Michelin-starred chef Joris Bijdendijk, has a new location: Wils Bakery Café. And this place is not just any café; the bread here is made by the Netherlands’ very first bread sommelier.

Baker’s son Maxim Rolvink worked for more than two years at an organic artisan bakery, where he developed breads for the hospitality industry. He then started working at Joris Bijdendijk’s restaurant Wils, where he comes up with breads that complement or enhance the dishes. He was also named the very first bread sommelier in the country—and that earned him a coveted spot in the FavorFlav Food Top 100.

Wils Bakery Café will be a place where the craftsmanship of a bakery is combined with the atmosphere of a cozy French bistro. The menu will feature many familiar dishes from restaurant Wils, such as the classic pastrami sandwich and the best schnitzel in town. Alongside the bread baked by Maxim, there will be treats from pastry chef Tania. Barbera will serve guests the most flavorful wines to enjoy with their drinks and snacks.
