Best Meatloaf Ever

Slow cooker method

Grease the slow cooker and line it with parchment paper. Place all the ingredients for the meatloaf in a bowl and season with salt and pepper. Mix well. Spoon the meat mixture into the slow cooker and press down.

Cook on the low setting for four hours or until the meatloaf comes away from the sides. Meanwhile, for the tomato sauce, place all the ingredients in a saucepan and put it over medium-high heat. Bring to a boil, reduce the heat and simmer for another 15 minutes until thickened. Season with salt.

Turn the meatloaf out onto a plate, pour the sauce over it and serve with mashed potatoes and briefly sautéed spinach.

Oven method

Preheat the oven to 170 degrees. Place all the ingredients for the meatloaf in a bowl and season with salt and pepper. Mix well.

Spoon the meat mixture into a large baking tin and shape it into a loaf with your hands. Place the meatloaf in the oven for 1 hour and 15 minutes, until golden brown and cooked through.

Meanwhile, for the tomato sauce, place all the ingredients in a saucepan and put it over medium heat. Bring to a boil, reduce the heat and simmer for another 15 minutes until thickened. Season with salt.

Turn the meatloaf out onto a plate, pour the sauce over it and serve with mashed potatoes and briefly sautéed spinach.
