Chinese yardlong beans with ground pork

The book Wok Easy is packed with Asian dishes. All with few ingredients and a short preparation time. This Chinese stir-fried yardlong beans with ground pork is no exception.

Method
First, make the stir-fry sauce by mixing all the ingredients. You can store the sauce for up to 2 months in a cool, dry place.
Heat the wok over high heat until the pan starts to smoke. Add the yardlong beans or green beans and stir-fry for 1 minute, without oil. Reduce the heat to medium and roast the beans until charred and tender. Remove from the wok and set aside.

Heat the oil in the wok over medium heat, add the ground pork and fry for 3–5 minutes until browned. Add the garlic, ginger and peppercorns and fry for 1–2 minutes until everything starts to smell fragrant.
Return the beans to the wok, along with the sauce and sugar, and toss everything together. Divide the rice between 2 bowls and spoon the bean mixture on top.
