Chipas: Argentine Cheese Breads

Small bread rolls, filled and covered with cheese. Argentine chipas sound like every cheese lover’s dream.

In Puerto Iguazú, a city in Argentina on the border with Paraguay and Brazil, this cheesy snack is a local favorite and is sold in small stalls from morning until evening. Because of the city’s location at a tri-border point, the neighboring countries also have their own variations of chipas. In Brazil, this cheese ball is called pão de queijo, and in Paraguay chipa argolla. The preparation method is more or less the same; only the shape differs: round or diamond-shaped.

I get it: it’s a long way to travel for a few cheese breads. Fortunately, you can also easily make chipas at home. Gather milk, eggs, butter, flour, tapioca flour and enough Italian cheese to make this recipe.
