That Master Pastry Chef Hidde de Brabander makes amazing chocolate desserts will come as no surprise to anyone, but beer with chocolate? You read that right: Hidde is launching a genuine little chocolate beer in collaboration with Brouwerij Noordt.

‘ I find beer incredibly interesting, so I invited myself to Brouwerij Noordt in Rotterdam to learn more about it. When owner Peter and I had a beer to round off the day, we wondered why we shouldn’t simply develop a beer together. A week later, I was at the brewery selecting my own malt,’ says Hidde.

Chocolate porter

It may sound a little strange, chocolate in your beer, but when you think about it, it actually makes perfect sense. Porter is often made with malts known as chocolate malt. ‘That has nothing to do with chocolate, but the grain’s flavor has a chocolate note,’ Hidde explains. ‘I really wanted to add cocoa, so I selected beans from Madagascar and added them during the brewing process. As a result, our Chocolate Porter has an extra-dark flavor. It really borders on black.’
