How to make Nick Toet’s Mac ‘n Cheese
- Put the pasta in boiling salted water and check the package for the cooking time. Make sure you don’t use the full cooking time, but cook it just a little less (6 minutes instead of 8, for example). This keeps the pasta al dente, because it still has to go into the oven later. Drain and pour the olive oil over it. Massage the pasta.
- Melt the butter in a pan. Throw in the flour and use a whisk to stir it through. Cook the flour for 2 minutes (it will start to bubble a little). Add the milk and heavy cream a splash at a time. This allows the flour mixture to gradually adjust to the milk and cream, and the sauce will slowly thicken. Season with salt and pepper.
- Now stir the cheese into the sauce in batches. Don’t force it—just take it easy. Set aside some Parmesan and mozzarella for the gratin topping. Keep stirring well, don’t let it burn, and make sure there are no lumps.
- Preheat the oven to 180 °C.
- Mix the pasta with the cheese sauce in a bowl. Then put everything in the baking dish, scatter the remaining Parmesan and mozzarella on top, and bake for 30 minutes. It’s ready when the cheese on top has melted nicely and developed a beautiful leopard pattern. Scatter the basil over it. Buon appetito!
