How to make warm bread pudding with apple and raisins
- Preheat the oven to 180°C and line the loaf tin with baking paper.
- Place the raisins in a bowl of warm water and leave them to soak for 10 minutes.
- Tear the bread into pieces and place it in a large bowl. You can simply use the crusts too.
- Mash the bananas finely in another bowl with a fork and add the almond milk, speculaas spices, salt and vanilla extract. Stir until smooth.
- Drain the raisins. Add the pieces of bread and the soaked raisins to the batter and stir well.
- Cut the apple into small cubes and fold them into the bread mixture.
- Spoon the bread mixture into the loaf tin and flatten it with a spatula or the back of a spoon. Bake the bread pudding in the oven for 55–60 minutes. Note! Every oven is different, so keep a close eye on it.
- Let the bread pudding cool for a few minutes. Cut it into pieces or spoon it out of the loaf tin.
Storage tip: store the bread pudding in the refrigerator for 3–4 days. You can eat the bread pudding both warm and cold.
