Delicious leftover recipe: croissant cake

This hospitality entrepreneur doesn’t believe in wasting anything: leftovers are the basis for a new meal, and with his help you can use every crumb in the kitchen. Do you always buy too many croissants or chocolate rolls for breakfast or lunch? With this recipe, which Bryce developed for AEG, you can transform your leftovers into a delicious dessert.

Leftover croissants

It happens to me regularly: I pick up four croissants for 1 euro at Jumbo, and then only eat two of them. The next day they’re no longer crisp. With varying degrees of success, I make a grilled sandwich with them, but honestly: more often than not they end up in the bin—and that’s coming from someone who hates food waste. Not okay!

Luckily, Bryce comes to the rescue. Because just as you can make a really delicious oliebollen bread pudding with leftover oliebollen, you can bake a perfectly good cake with leftover croissants.

How to make a croissant cake

1. Boil 75 g sugar and 75 ml water until the sugar dissolves, then leave to cool.

2. Cut the croissants into rough pieces.

3. Beat the milk and egg until smooth.

4. Grease the baking tin and place 1 sheet of baking paper tightly in the tin.

5. Dip the croissant pieces thoroughly in the mixture, fill the greased baking tin and pour the remaining mixture over them.

6. Place the second sheet of baking paper on top and set aside for 1 hour.

7. Preheat the oven to 180 degrees combi-steam.

8. After 1 hour, remove the baking paper and pour 100 ml sugar syrup over the cake; then neatly place the baking paper back in the tin.

9. Put the tin in the oven and bake for 50 minutes.

10. After 50 minutes, remove the tin from the oven and set the oven to 160 degrees dry heat.

11. Remove the baking paper and sprinkle the remaining sugar syrup over your cake.

12. Return the tin to the oven for 20 minutes.

Serving tip: serve your croissant cake warm with a dollop of crème fraîche or vanilla ice cream.
