The aubergine is the pizza of the vegetable world. It makes the perfect base for other ingredients. Although the base is the same, the toppings create very different flavors.
How to make roasted aubergines
Preheat the oven to 180 °C. Score the cut side of the aubergines crosswise. Mix the olive oil with the ras el hanout. Brush the scored aubergine halves with the oil and ras el hanout mixture, place them on a baking sheet and roast them in the oven for 30 minutes. Roast the aubergines until the flavor has fully permeated them and they are tender but still firm. The skin keeps all the flavors inside. Afterwards, you can garnish them with whatever you like. If roasting the aubergines whole, pierce the skin with a fork.
