Divinely delicious recipe for Baileys speculaas waffle cookies

Are you someone who regularly puts a batch of fresh homemade cookies in the oven? Then try these delicious speculaas waffle cookies with Baileys Salted Caramel, dipped in chocolate. Mmm!

How to make Baileys speculaas waffle cookies
- For the cookies, put the speculaas in a blender and grind finely.
- In a bowl, knead the flour, baking powder, egg, sugar, butter, salt, Baileys and speculaas until a dough forms.
- Wrap the dough in foil and let it chill in the refrigerator for at least 1 hour.
- Preheat the waffle iron. On a floured work surface, divide the dough into pieces of approximately 30 g each.
- Use your hands to shape the pieces of dough into balls.
- Brush the waffle iron with a little sunflower oil and place the dough balls on the iron with enough space between them. Close the waffle iron and bake them for approximately 4 minutes until golden brown. Let the cookies cool on a wire rack.
- For the topping, finely chop the chocolate coating and melt it in a bowl over a bain-marie. Add Baileys and mix.
- Dip half of the cookies in the chocolate and let them set on a wire rack. Pour caramel sauce over the cookies, sprinkle with sea salt and serve.
Tip: The Baileys should be at room temperature for the topping so that it combines with the tempered chocolate.
