Do it! The Diplomático dinner at Selva shows that rum is an underrated star

When you think of rum, you think of piña coladas on the beach, paper parasols and staggering pirates. A fun image, but actually a real shame. Because rum has developed so much in recent years that it doesn’t need sweet companions at all to taste great. With the Diplomático dinner at restaurant Selva, Diplomático – producer of premium rums – wants to show this.

Diplomático dinner at Selva
From 3 to 17 November, Selva, which is already a South American holiday in your own country, will be even more tropical than usual. In an exclusive collaboration with Diplomático Rum, the restaurant is serving a limited-edition five-course menu, with the rich flavours of Diplomático’s premium rums returning in every dish. The special menu goes beyond the stereotype of rum as a cocktail base and showcases the versatility and refinement of this underrated spirit.
A subtle touch of rum is incorporated into every course, such as a refreshing lemon Daiquiri granita on an oyster and an intense Diplomático rum jus with the brisket. The roasted pineapple, glazed with layers of Diplomático Rum, rounds off the dinner alongside a scoop of black coconut ice cream.

Quality stuff from a Maestro Ronero
Although rum is often associated with tropical cocktails, that staggering pirate actually already showed that you can also drink rum neat. At least if you have quality stuff in your hands. Diplomático Rum, produced by Maestro Ronero Nelson Hernandez in Venezuela, has such deep, complex flavours that it holds its own against a glass of neat whisky. He makes an extensive range of rums that are beautiful both neat and as perfect, high-quality cocktail bases. From pure and light to dark and full-bodied, the higher the quality, the less it needs.
Cocktail pairing or rum tasting?
If you want to taste the difference for yourself, you can do so at Selva too. With the dinner, you have two additional options: you can have the adjoining cocktail bar Sonoma provide a creative cocktail pairing based on Diplomático, or choose a rum tasting. You’ll taste four different rums neat, with an extensive explanation at the table about the origin, distillation and flavour of the rums. For example, you’ll discover that the Reserva Exclusiva, with its vanilla notes, dried fruit and chocolate, is exactly the kind you’ll want to sip at home from your finest glass.
How much does it cost? The Diplomático dinner at restaurant Selva costs €69 per person, the rum tasting costs an additional €30, and Sonoma adds the cocktail pairing to the bill for €45. Make a reservation via selva-restaurant.com.
