We thought we had already found the ultimate sticky, sweet substance in dulce de leche, but now we’ve discovered something even more delicious, if possible. Dulce de leche made from coconut milk is a thing, and we want to drizzle it over everything.

Classic dulce de leche is made from condensed milk that you cook for so long that it caramelizes and turns into a thick, almost pudding-like substance. If you do the same with a can of coconut milk, the result is out of this world. Oh, and it’s also lactose-free, vegan, and everything.

What can you eat it with? Drizzled over ice cream, of course, as cake frosting, over pancakes or bread pudding, or spread it on toast. Can’t get enough coconut? Toast some shredded coconut until golden brown and sprinkle it over the dulce de leche. You’re welcome.

Method

Heat all the ingredients over low heat in a sturdy frying pan until the sugar has dissolved. Turn the heat to medium-high and cook until the mixture has reduced to approximately 600 ml. This takes about 20 minutes; stir occasionally. Pour the sauce into small jars, leave to cool, cover, and refrigerate.
