Easy recipe from a top chef #2: BBQ sauce

Asking a (star) chef for their signature recipe that’s also simple to make mainly results in raised eyebrows. Before long, a blast chiller, shock freezer or built-in steam oven enters the picture. You don’t need any of that for Arnout van der Kolk’s (C Amsterdam) killer BBQ sauce.

Sometimes you eat something that’s so unbelievably delicious that you can’t help but try to coax the recipe out of the chef in question. That’s what happened recently when I ate a pork rib with the sauce of all sauces. I licked the plate clean with my finger, but what I really wanted was to spoon an entire jar empty. Chef Arnout was kind enough to share his recipe. Use it generously with all your summery BBQ dishes and everyone will love you. 

Here’s how to make it

  • Put all the ingredients in a large pan over the heat and reduce by half.
  • If desired, add lemon juice and salt to taste.
  • The sauce is perfect for glazing your spareribs, for BBQ chicken, and it even works well with fish. Spread love as thick as barbecue sauce. Amen.
