Mortar and pestle

The mortar is one of the oldest kitchen tools we know. It is said to have existed as early as 3500 BC. And in all that time, it has barely changed worldwide. A mortar and its pestle would be immediately recognizable to a time traveler from the Middle Ages. A round bowl and a blunt stick – that’s it.

Its use has barely changed either, even though we have just emerged from a ‘packets and sachets’ period in which the mortar mainly stood decoratively on the countertop.

Using a mortar and pestle is simply very zen.

But that time is over. Now we pound and mix our own herb and spice blends in the mortar as if we have never done anything else.

For Indian curry or Indonesian soto ayam. The mixologist at the cocktail bar also likes to use the mortar and pestle for a fresh fruit, herb and even vegetable mix in his mixed drinks. And he calls that muddling.

Using a mortar and pestle (or muddling) is a simple artisanal act that clears your head. With beautifully fragrant and flavorful results to boot. That alone is why we use the mortar almost every day. Using a mortar and pestle is zen.
