Good Bite: Bibimbap

Bibimbap literally means ‘mixed (rice) meal’ in Korean. You can add virtually any vegetables and meat you like. In the recipe from Instock’s cookbook, fermented vegetables, spring onion and pickles are used, but you can also replace these with, for example, broccoli, grated carrot and pumpkin.

Bart Roetert, Selma Seddik and Freke van Nimwegen are the three founders of Instock and previously worked at Albert Heijn. There, they watched with dismay as a lot of food was thrown away. With Instock, they found a new destination for food that would otherwise have been discarded: they simply put it on the menu. And now they also have their own cookbook.
Preparation
Prepare the rice according to the instructions on the package.
Mix the vinegar, sugar and salt and heat in a pan on the stove. Stir the homemade ‘sushi seasoning’ thoroughly into the rice with a wooden spoon.
Meanwhile, take your pickled vegetables and kimchi out of the refrigerator and let them come to room temperature.
Finely chop the spring onion, fry the eggs and serve with the rice, pickles and kimchi. Sprinkle some sesame seeds over the dish to finish it off, and add chili sauce and kecap manis to taste.
