How to make Spaghetti Pomodoro from ‘The Bear’
- Bring a large pot of water with a pinch of salt to the boil.
- Put the 10 peeled garlic cloves, olive oil and basil in a pan and turn on the heat. Once the oil is hot, fry the garlic over low heat for a few minutes.
- Every so often, remove the wilted basil from the oil and replace it with fresh basil. This gives the oil the most flavor.
- Then remove the pan from the heat, add some fresh basil one last time and leave to cool.
- Put the tomatoes, garlic, basil and two tablespoons of olive oil in a food processor or blender.
- Season with salt and pepper.
- Then pour the tomato sauce into a pan and let it reduce slightly until it thickens.
- Meanwhile, cook the spaghetti.
- Add the fresh herbs to the tomato sauce and season with salt and pepper if necessary.
- Using tongs, add the cooked spaghetti to the tomato sauce. Shake the pan so the spaghetti is well coated with the sauce. If the sauce is a little thick, you can add some pasta water.
- Serve with fresh basil.
