How to make them yourself: Frikandel rolls

How to make the frikandel rolls
- Put the meat in the freezer for about 45 minutes and make sure it is lightly frozen.
- Mix the spices with the salt. Remove the meat from the freezer, cut it into pieces and put it in the food processor.
- Add the spices and breadcrumbs and let it blend like hell. You have now made a ‘farce’: a fine meat paste.
- Place a piece of plastic wrap on your work surface. Shape the farce into a 17-centimeter-long sausage and roll it out evenly on the plastic wrap. Fold the plastic wrap over the meat and close it, squeezing the ends together while twisting the plastic. Make 8 frikandels this way.
- Heat a pan with plenty of water to 70 °C. Add the frikandels and gently poach them for 15 minutes. Remove them from the pan, take off the plastic wrap and leave them to cool.
- Preheat the oven to 220 °C.
- Take 2 pieces of puff pastry and roll them out until they are just slightly longer than the frikandel. Spread one sheet with curry and place a frikandel on top. Place the other piece of puff pastry on top and seal all the edges with a little beaten egg. Press down with a fork. Brush the top with egg as well and make a few cuts in the top with a knife.
- Place the roll on a baking tray lined with parchment paper. Make 4 frikandel rolls this way.
- Bake the frikandel rolls for 15 to 20 minutes until golden brown and cooked through.
