How to: make vegan almond paste

Making your own almond paste is not difficult at all, and you can vary the flavor endlessly. As the recipe recommends, the paste will taste better if you let it mature in the refrigerator overnight. But if you’re in a hurry, you don’t have to. Applesauce helps bind the paste, but if you don’t have any, plant-based milk works perfectly well for achieving the right consistency.
How to make almond paste
Put all the ingredients in the small bowl of a food processor and process to taste until you have a coarse or smoother mixture. If the mixture is still too crumbly, add a few drops of water if necessary. Let rest in the refrigerator overnight.
Variation tips
Pumpkin seed paste, walnut or hazelnut-orange paste with cinnamon, or cashew-lime paste with coconut: anything goes. Use the same method as for the almond paste, but with different ingredients from the ingredient list alongside.
