Ideal for a picnic or drinks: Angostura onion dip

Take it along to a picnic in summer or serve it with a convivial drinks spread with friends in winter: this onion spread is perfect for dipping those ever-reliable plain potato chips into, or raw vegetables, or spreading thickly on a piece of baguette with some arugula on top!

We’ve sung the praises of Angostura bitters before; that special little bottle from which only a few drops ever go into certain cocktails. To make sure that bottle doesn’t disappear into the back of the cupboard for months again, here’s a delicious recipe:
How to make caramelized onion dip with Angostura bitters
- Peel the onions and cut them into quarters lengthwise.
- Cut the quarters into very thin rings.
- Heat a frying pan with a (safe) non-stick coating over medium heat.
- Add the onion rings and sprinkle the salt over them.
- Sauté for about 10 minutes.
- Meanwhile, mix the olive oil, Angostura bitters and vinegar in a small bowl.
- Pour over the onion rings and mix well.
- Turn the heat to low and let them caramelize gently for 30–40 minutes, stirring regularly.
- Remove from the heat and allow to cool completely.
- Fold the cooled onion rings into the sour cream.
- Refrigerate for at least 3 hours to let the flavors infuse, and your dip is ready!
