Irresistibly delicious: no-bake Baileys cheesecake with Oreo

Baileys cheesecake

This no-bake cheesecake is ultra-creamy, has a crunchy Oreo cookie base and contains a generous splash (let’s say a full glass) of Baileys. Combined with a hint of coffee, this makes a cheesecake that is simply irresistible.

It’s also wonderfully easy because this cheesecake doesn’t need to go in the oven. Stirring melted white chocolate into the filling keeps it firm too, without needing a sheet of gelatin.

How to make the Baileys cheesecake

  • Crush the Oreo cookies finely or grind them in a blender. Melt the butter and add it to the crushed cookies along with the salt. Stir.
  • Put the cookie mixture in the springform pan and press it down firmly with the back of a spoon.
  • Dissolve the instant coffee powder.
  • Melt the white chocolate au bain-marie.
  • Whip the cream until stiff and keep it in the refrigerator.
  • For the cheesecake filling, mix the cream cheese, sugar and vanilla in a large bowl until smooth. Then gradually pour in the Baileys.
  • Gently fold in the melted white chocolate until everything is well mixed. Do the same with the whipped cream you kept in the refrigerator.
  • Spoon half of the cheesecake mixture onto the cookie base in the pan. Add the dissolved coffee to the other half and mix well. Pour this on top of the other mixture in the pan.
  • Cover the cheesecake and refrigerate for at least 9 hours.
  • When you’re going to serve the cheesecake, you can make the ganache. To do this, heat the cream with the Baileys in a saucepan. Put the chocolate in a heatproof bowl and pour the heated cream and Baileys over it so the chocolate melts. Stir well until smooth and glossy, then leave to cool.
  • Once the ganache has cooled, pour it over the cheesecake.
  • Decorate the cake with swirls of whipped cream, coffee beans and chocolate shavings.
