Jamie Oliver’s Brilliant Bhaji Burger

If there’s one thing Jamie Oliver is good at, it’s comfort food. Even when it’s vegetarian, like this bhaji burger with coriander yogurt, mango chutney and crispy pappadum crumbs. His new book Veg is packed with many more lovely recipes like this.

How to make it

1. Peel the onion and garlic and slice them very finely. Remove the seeds and slice the green chillies into thin rings. Finely chop the coriander stalks and set the leaves aside. Put everything in a bowl. Coarsely grate in the paneer and butternut squash (removing the seeds if necessary), and finely grate in the peeled ginger. Sprinkle over the flour and a pinch of sea salt and black pepper, and squeeze the lime over it. Add the curry paste and 50 ml of water and mix everything well.

2. Put 2 tablespoons of oil in a large non-stick frying pan over a medium-low heat. Divide the vegetable mixture into 4 equal portions, place them in the pan and press them down slightly so that the round patties are about the same diameter as the buns (the rougher the better – the ragged edges make them extra crispy). Cook them for 16 minutes in total, or until golden brown and cooked through, turning them every few minutes. Meanwhile, grind most of the coriander leaves in a mortar until smooth, stir in the yogurt and season to taste with sea salt and black pepper. Slice the lettuce into very thin strips, split the buns (warm them first if you like), and microwave the pappadums for 30 seconds.

3. Divide the coriander yogurt over the cut sides of the buns, break the pappadums into small pieces and sprinkle them on top. Place the crispy bhaji burgers on the buns, finish with a spoonful of mango chutney, a few coriander leaves and the lettuce, top with the lids and gently press them down.

4. Serve the burgers with a cold beer and, if you like things spicy, as I do, some extra chillies.

5. You can have real fun with this recipe by experimenting not only with the vegetables, but also with different types of curry paste.
