Why Fresh?
IPA (which stands for India Pale Ale) was discovered when people found that beer with more hops was still of excellent quality after a long sea voyage. The hops acted as a preservative, but otherwise did nothing for the taste. Nowadays, however, IPA is not a beer meant for aging at all, and it is best enjoyed fresh. The flavors of the hops diminish quickly, especially when the beer isn’t stored in a chilled environment.”
