Love for creamy no-bake pies

For when your oven is busy with other treats, you don’t have an oven, or you simply feel like a really thick slice of pie. You don’t have to bake these examples, just leave them in the fridge for a while.

Crust
The base of a no-bake pie is usually made from crumbled cookies mixed with melted butter, which sets again in the fridge. Feel free to vary the types of cookies; the plain Bastogne crust is starting to get a little old for us. If you mix Bastogne with digestive biscuits, you get a much more crumbly crust, which is delicious. Or go for Oreos or jodenkoeken.

Filling
The filling is made with custard, which, just like the crust, becomes firm again in the fridge. This can sometimes take a few hours. Gelatin can also be used to help get this process started, for example in a cheesecake. You can go in any direction by trying different crusts with different fillings. These are our favourites.

Banoffee
The ultimate crowd-pleaser—everyone always wants a second slice, so make enough. The digestive biscuit crust is filled with bananas, caramel and whipped cream, and topped with shaved chocolate. Also delicious with chocolate sprinkles, yes, the kind you put on bread. Make it at home with this recipe.

Cream pie
A luscious filling, similar to pastry cream. Whether it is banana cream pie or this chocolate cream pie, whose crust is made with beurre noisette and a touch of salt. Wow.

Cheesecake
Not every cheesecake needs to go in the oven. Because chocolate becomes firm at room temperature, this white chocolate cheesecake does not even need gelatin.

Key lime pie
Key limes are special limes that are not available in the Netherlands. But even with good-quality regular limes, this is a delicious pie.
