Moon over A’Dam

Tomorrow, Amsterdam’s long-awaited highest restaurant, Moon, will open on top of the former Shell stronghold. FavorFlav was allowed to preview the revolving restaurant, 19 floors up in the A’Dam Tower.

The restaurant completes a 360-degree circuit every hour, offering guests from the 19th floor a très Instagrammable panoramic widescreen view of the capital. Meanwhile, signature chef and former Ron Blaauw apprentice Jaimie van Heije keeps an eye on what chef Tommy den Hartog (formerly of restaurant Johannes) is preparing.

Sun, moon, stars

And even though Ron Blaauw himself has since moved away from visually striking dishes in the shape of the sun, moon and stars, for now this painting on the plate is the signature of Moon’s signature chef.

The procession of dishes ends in the golden angel wings of the dessert Guardian Angel.

So we begin the five courses with a moon made of duck liver, beetroot, tartare and kaffir lime. And the procession of dishes ends in the golden angel wings of the dessert Guardian Angel: blancmange, calamansi (citrus fruit) and caramel.

Gimmick

Another visual gimmick at Moon is the fact that the tables orbit the bar and kitchen, like the moon around the earth. Thus, once an hour, the chefs suddenly appear behind you again as they toil away at your next dish.
