Must-watch: Brut, Dreams Under Great Pressure, the Eye-Opening Series About Star Chef Hans van Wolde
Some people reach a point in their lives when they leave everything behind to pursue their dreams. When watching the new series Brut, Dreams Under Great Pressure, you soon realise: some dreams should simply remain dreams.
The series revolves around star chef Hans van Wolde’s dream: creating the best, most beautiful, most unique and most exceptional restaurant in the Netherlands. Brut 172 (we wrote about it before) is not meant to become just any restaurant, but an experience. In Brut, Dreams Under Great Pressure, Hans is followed for two years as he makes his dream (read: nightmare) a reality.
Flavour artist
Hans van Wolde has been one of the Netherlands’ leading chefs for more than 25 years. He was interested in food and flavour from a young age and was able to channel his creativity and energy into his profession as a chef, or rather: ‘flavour artist’, as he calls himself. In 1994, Hans moved to Maastricht, where he first worked for Toine Hermsen for four years before opening his own restaurant, Beluga. He received his first Michelin star there in 1998. The second followed in 2005.
Pursuing a dream
A successful business, two Michelin stars… and yet he decides to turn his life upside down and pursue his dream. Making it happen does not go smoothly. The series shows how Hans has to overcome major hurdles to pursue his dream and build Brut 172 in the beautiful Limburg village of Reijmerstok.
And then… lockdown
Fighting for permits, selling Beluga, leaving Maastricht, moving to the countryside, handing in his Michelin stars, lawsuits, appeals procedures… It is a process of saying goodbye and starting over time and again. Just when he thinks everything is behind him, last March, five days after Brut 172 opened, the entire country goes into lockdown… How does Hans react when his dream threatens to fail and comes under pressure? (A little teaser: “I gave up my whole life for this, I’m sick to death of that fucking farm!”)
