No-cook pasta sauces

Pasta is always a favourite meal when you need to get something on the table quickly after a busy day. After all, a carbonara or aglio e olio is ready in the time it takes to cook the pasta. Even less effort is required for these pasta sauces that you don’t even have to cook.

Pesto

Pasta pesto can be so much more than that ready-made pesto stirred through your pasta. If you make your own pesto, you can proudly serve this dish to your guests. And alright, if you’re feeling very lazy, I’m perfectly happy for you to use something from a tub, but make sure it’s from a good shop.

Tomato and almond

Remove the seeds and cut the tomatoes into small cubes. Stir in chopped almonds, finely chopped garlic and a splash of olive oil. Season with salt and pepper and leave to stand for at least half an hour, but preferably a few hours. The freshness of the garlic and tomatoes makes this the ideal summer pasta. Serve with Parmesan cheese and, optionally, fresh basil.

Herbs and lemon

Basil, parsley or tarragon—any soft herbs are suitable for a quick pasta with lemon. Put the herbs (a mixture, if desired), lemon juice and plenty of Parmesan in a large bowl. Stir the pasta through the mixture immediately after draining, until all the cheese has melted. Season with pepper or, optionally, dried chilli flakes.

Carrot and hazelnut

By putting carrot and hazelnut with cheese and garlic in a food processor, you can also make a kind of pesto. Super easy and a great way to get your vegetables in.
