Ottolenghi opens new restaurant

Bestselling author and one of our favorite chefs, Yotam Ottolenghi, is expanding his London empire. At the end of June, he will open his new restaurant, Rovi, in the Fitzrovia district.

Rovi is the Israeli-British chef’s third concept. He started with delis and accessible restaurants, then opened his first more upscale restaurant, Nopi, in the Soho district in 2011. As we’ve come to expect from Ottolenghi, Rovi focuses on cooking with vegetables. Fermentation also takes center stage, as does grilling over fire. Cocktails are made with seasonal herbs, and the wines come from small producers.

Sustainability is an important aspect of Rovi: leftover wine will be used to make vinegar, and used coffee grounds will be incorporated into dishes. The building’s ventilation system has been designed so that the heat generated in the kitchen can be used to heat the entire restaurant and the water.
