Pancakes with just 3, 2 or even 1 ingredient

Foodie or not, sometimes a trip to the (super)market feels like the biggest task ever. You could call it laziness, but it also makes you creative: because what can you often still make with the ingredients you do have at home? Pancakes!

With a little improvisation, you can often get quite far. From fitgirl-worthy vegan pancakes to the most delicious savoury pancakes of your life, here’s how to do it:
Three ingredients
Anyone who has ever ended up in Pinterest’s fitgirl section has probably seen them before: banana-oatmeal pancakes. Sometimes vegan with almond milk, sometimes non-vegan with egg. But always made with ground oatmeal and mashed (ripe) banana. Okay, and a little oil for the pan.
Two ingredients
A little less sweet and fluffy, but wonderfully creamy and dense, are these cream cheese pancakes. The only things you need: eggs and—as you might have guessed—cream cheese.
Or how about sweet potato-based pancakes? Bake the potato first, let it cool, mix it with some eggs and voilà: there’s your batter.
One ingredient
Yes, you read that right: you can make pancakes (even stacks of them) with just one ingredient. What is it? Chickpea flour. Okay, before you enthusiastically throw it into the pan: mix it with water first. You can consider that two ingredients, but hey: you have water at home anyway, so it doesn’t really count. Add plenty of water for thin crêpes, or a little less if you prefer thicker ones (don’t make them too thick, as they’ll become quite dry). Also delicious with some pepper, salt and coriander.
