Pearl Couscous with Orange: Our New Favorite

Pearl couscous, with its beautiful, plump grains, has a lovely firm bite. In this recipe, you combine it with juicy orange segments, crunchy pistachios, fresh cucumber and lots of flat-leaf parsley. The dressing with orange juice, cumin and honey finishes it off perfectly. You can never have enough side dishes like this in your repertoire!

Variations Are Welcome (and Even Recommended)

Is your orange sweet enough already? Then use a little less honey. Prefer a spicy twist? Add some chili to the dressing. In the mood for more bite? Some feta or grilled halloumi also works beautifully here.

How to Make Pearl Couscous with Orange and Pistachio

  1. Cook the pearl couscous
    Cook the couscous according to the package instructions. Drain, rinse under lukewarm water and drain well.

  2. Make the dressing
    Mix the orange juice and zest with cumin, honey and olive oil to make a dressing. Season with salt and pepper.

  3. Mix everything
    Toss the lukewarm couscous with orange segments, pistachios, red onion, cucumber and parsley. Pour the dressing over it and serve at room temperature.

What Should You Serve with It? Tips!

  • Lamb chops with dukkah: deliciously herby and wonderful with the orange.

  • Grilled mackerel with mandarin sauce: citrus on citrus is always a good idea.

  • Or… just enjoy it as is! As a light lunch or picnic dish.
