Q&A with Franska Stuy

Franska Stuy – you may remember her as the former editor-in-chief of Libelle – has launched her own website: Franska.nl. And as it happens, we share an office with Franska and her team. And Franska also happens to be a huge fan of food.

Which food trend should we put an immediate stop to?
Standing at the table for ages talking about what’s on my plate. I already know, because I’ve already ordered it.
Most memorable dining experience?
El Celler de Can Roca in Girona, I think, but also Geranium in Copenhagen or Noma, when it had just opened. At Celler, you were also allowed to talk normally; I don’t like whispering in a restaurant.
Favorite drink?
Champagne. Ruinart Chardonnay or Laurent-Perrier Brut.
Indispensable kitchen gadget?
Still the Magimix
What will you never eat again?
Mussels, because they’ve made me sick three times now. But I still try the moules de bouchot in Brittany and Normandy every time.
Which country is your favorite when it comes to food?
Italy, because it’s a favorite in every respect. Fashion, people, landscapes, and therefore the food too.

Go to The Jane again. I’d also like a real, fancy juicer. And go to Japan once.

What do you like to make at home when you want to eat quickly and well?
Spaghetti aglio e olio
Which dish do you have no self-control around?
Oysters, pure, without anything on top.
