Recipe: Amsterdam Bruschetta

Why only eat herring the ‘old-fashioned’ way? Put that delicious Hollandse Nieuwe on a sandwich for once. No, not one of those white bread rolls with pickles and onion, but on a deliciously crispy bruschetta.

Preparation
- Place the onion rings in a bowl and pour the vinegar over them. Leave the onion rings for about half an hour (or longer) until they have softened somewhat.
- Cut the herrings into long strips.
- Spread some olive oil over the bread and toast the slices of bread in a contact grill (or frying pan) until you see brown stripes. This is how you make bruschetta.
- Are your bruschetta ready? Spread butter and mustard on the slices, then top with lamb’s lettuce. Place the herring strips on the bread.
- Finally, divide the onion rings, Amsterdam pickles and capers over the bruschetta. Serve the bruschetta on a greaseproof paper napkin.
