Method
- Bring the milk to the boil with the strips of lemon zest, a little salt and the vanilla pod. Add the rice, stir in the sugar and cook until the rice is tender. Pour any remaining milk out of the pan and let the cooked rice rest.
- Whip the cream until stiff.
- Beat the egg yolks in a small jug and pour them into the rice. Add the whipped cream as well. Mix everything together thoroughly over the lowest possible heat, then leave to cool.
- Spoon the sweet rice into bowls and sprinkle ground cinnamon over the dish before serving. Garnish with redcurrants.
